Is this the right starting point?

If you own no pump, yes: it is the only complete system on this shelf. The two stopper packs here are refills for exactly this pump and say so. The ERHIRY and sunwuun stoppers need no pump at all, and seal one or two bottles instead of four.

What does the click tell me?

That the pump has reached its working vacuum. It is the answer to the only question a manual pump raises, it needs no battery, and it is unique to Vacu Vin on this shelf.

Four stoppers — too many?

Not if a household drinks a red and a white in parallel and keeps a sparkling in the fridge door. If one bottle at a time is the reality, the cheaper self-sealing stoppers on this shelf are the better buy.
